Butter and Honey Gruel
酥蜜粥 〔酥蜜粥〕 sū mì zhōu

Ingredients
- Sū (酥 Bovis seu Ovis Butyrum, butter) 20–30g
- Fēng mì (蜂蜜 Mel , honey) 15g
- Jīng mǐ (粳米 Oryzae Semen, non-glutinous rice) 60g
Actions: Supplements the five viscera; boosts qì and blood; moistens dryness.
Indications: Used for general vacuity and emaciation,
Method: Make a gruel with the rice, and then add the butter and honey.
Rationale: In China, the standard way of making butter is to heat milk in such away as to make the fat exude, although books do describe a vulgar
method of churning the milk in a cowhide bag until it separates, which is similar to the Western method. Butterharmonizes the hundred drugs.
Modern research shows that in addition to containing glucose it also contains protein, amino acids, vitamins A, B2, B6, C, D, and K, choline, niacin, pantothenic acid, and trace elements such as folacin, magnesium calcium, potassium, sodium, phosphorus, Liú huáng, iron, manganese, copper, and nickel.
