Stir-frying with ginger juice

薑汁炒 〔姜汁炒〕jiāng zhī chǎo

Stir-frying medicinal materials that have been soaked in a decoction of fresh ginger (Zingiberis Rhizoma Recens, 生姜 shēng jiāng). Bamboo shavings (Bambusae Caulis in Taenia, 竹茹zhú rú), gardenia (Gardeniae Fructus, 山栀子 shān zhī zǐ), tsaoko (Tsaoko Fructus, 草果 cǎo guǒ), and coptis (Coptidis Rhizoma, 黄连 huáng lián) may be stir-fried with ginger juice.

Method: Boil 1 kg of crushed or finely sliced fresh ginger in 3 l of water in an earthenware pot shā guō for thirty minutes. Strain and reduce the liquid to 1 l. Stir in the materials thoroughly so that all the liquid is absorbed, and then stir-fry in the earthenware pot until dry. Do not use a steel wok. Stir-fry in small quantities, because the earthenware pots easily break.
