Mix-frying with ginger

薑炙 〔姜炙〕jiāng zhì

Stir-frying medicinal materials that have been boiled with fresh ginger (Zingiberis Rhizoma Recens, 生姜 shēng jiāng). Magnolia bark (Magnoliae Officinalis Cortex, 厚朴 hòu pò) may be processed in this way.

Method Place the materials with finely sliced fresh ginger in a brass wok, and cover with enough water to submerge the materials 3 cm below the water surface. Bring to the boil and simmer for 2–3 hours. Strain and remove ginger, and reserve the juice. Wind-dry until half dry, and then blend with the remaining juice. Boil off the fluid until dry. Compare stir-frying with ginger juice.
