Stir-frying with clamshell powder

蛤粉炒 〔蛤粉炒〕gé fěn chǎo

Tossing (medicinal materials) with clamshell powder (Meretricis seu Cyclinae Concha Pulverata, 海蛤粉 hǎi gé fěn), in a wok over a flame. Clam shell powder is fine, and conducts heat slowly, and hence poses little danger of burning. For this reason, it is often used to treat gelatinous animal products, which are allowed to turn yellow or bubble up at the surface before removal. Ass hide glue pellets (Asini Corii Gelatini Pilula, 阿胶珠 ē jiāo zhū) are made in this way. Talcum (Talcum, 滑石 huá shí) is used in exactly the same way as clamshell.
